The Ginger Pig story began down on the farm, where for many years Tim Wilson oversaw his own North Yorkshire pasture, complete with cattle, sheep and pigs and a passion for sustaining rare breeds.
Having been asked to be one of the first traders in Borough Market in the 1990s, The Ginger Pig has grown, becoming one of the country’s most renowned butchers, but with the same approach at the heart of everything they do.
By only working with like-minded farmers, they are able to supply produce of the highest quality. Like us, they are passionate about provenance and sustainability and know that livestock that is well looked after in the field simply tastes better on the plate. We couldn’t agree more!
