This seasonal recipe keeps the ingredients & preparation time to a minimum, but what it lacks in hard work it makes up for in colour & flavour! Add this to any al fresco feast, sit back & enjoy the Summer weather!
750g carrots, peeled
1/2 orange, juiced
1/2 lemon, juiced
1 tbsp, olive oil
1 tsp, honey
pinch of salt
50g pistachios, chopped
1/2 tsp, Lebanese 7-spice seasoning
Create ribbons with the carrots using a peeler.
Add orange & lemon juices, oil, honey, salt to a bowl and mix. Add carrot ribbons.
Toast pistachios in a dry pan, medium heat, 4 minutes. Add the seasoning.
Scatter pistachios over carrots to serve.
And all in less than 5 minutes!
