February Recipe: Vegan Breakfast Muffins

Because our Vegan menus are not just for Veganuary (and also because we keep being asked for the recipe), we are sharing our top secret Vegan Breakfast Muffin recipe with you. Trust us, it’s delicious!

To make 12 muffins you will need:

450g self raising flour
1 1/2tsp baking powder
1tsp baking soda
3tsp ground cinnamon
1tsp vanilla extract
100ml vegetable oil
150ml maple syrup
210ml soya milk (or other dairy free milk)
2 apples, grated
3 ripe bananas, mashed
100g Medjool dates

Oats & demerara sugar for the topping


1. In a large bowl sift together all dry ingredients
2. Beat the banana in a mixer until smooth
3. Add the oil & milk
4. Add the dry ingredients and mix until combined
5. Divide the mixture between the muffin cups, sprinkle each muffin with the sugar & oats
6. Bake for 25 minutes, or until a toothpick into the muffin comes out clean
