Here is our recipe for Beetroot Hummus. It’s a perfect snack for you to make at home this Veganuary and to brighten up a January day!
What you’ll need:
(enough for 2-4 depending on serving size!)
1 tin of chickpeas
2 garlic cloves
1 lemon, juiced
2 tablespoons of tahini
1 medium cooked beetroot
1 tablespoon olive oil
Put the chickpeas (drain these but keep a few tablespoons of liquid to add later), garlic and lemon juice into a blender and pulse for approximately 30 seconds. Then chop the beetroot and add this along with the olive oil and tahini, and blend until you have a coarse but creamy consistency. Add salt to taste. Blend again whilst adding a tablespoon of liquid from the chickpeas at a time until you get your desired texture. Perfect for dipping your chosen accompaniment into!
